I’ll Have A Champagne Cocktail

June 4th is my most favorite day of the year. It’s my birthday. My own personal New Years Day. So, I threw myself a big, beautiful party. I served key lime pies, brownies, homemade ice cream sandwiches, and the classic champagne cocktail. We had a fire going in the backyard. My good friend made me a birthday cake. We all giggled, clinked glasses, and stumbled on our tipsy feet every now and then. When it came time to sing I made sure the lights were low, and the voices loud. I blew out all of the candles in one breath, and thanked my lucky stars that I have such wonderful friends.

The champagne cocktail is one of the oldest, classic cocktails dating back to the mid 1800s. It’s simple, but elegant. You begin by soaking a sugar cube in 3 drops of aromatic bitters. Drop the cube in a flute, and then pour champagne over top. Using a lemon peel, rub around the rim of the glass as well as the stem (the lemon scent will get on your hands, which will help enhance the flavor!). What’s lovely about this cocktail is that the taste evolves as you drink it. It starts off with a woodsy essence thanks to the aromatic bitters. As the sugar cube dissolves, however, it becomes sweeter and sweeter (not too sweet though). Before you know it you’re staring down an empty champagne flute. Time for another one.

Champagne Cocktail

A simple, but elegant classic cocktail

Ingredients

  • 1 Sugar Cube
  • 3 drops Aromatic Bitters
  • Champagne or any Sparkling Wine
  • 1 Lemon Peel

Instructions

  1. In a spoon, soak a sugar cube with 3 drops of aromatic bitters.

    Drop sugar cube in champagne flute.

    Pour in champagne.

    Rub a lemon peel around rim of glass as well as on the stem.

    Garnish with the lemon peels.
